Clark Favorite Cheeseburger Macaroni–Try a New Recipe Tuesday

Posted on

I know I’m a bit late posting this, but it is summer. I’ve been trying to take some time to rest. Here’s another recipe my family can’t get enough of. When I cook this, I make a bunch. Prince Charming can down half the pan by himself.

Clark Favorite Cheeseburger Macaroni

  • 1 pound spiral, rigatoni, or shell pasta
  • 1 pound ground beef
  • 1 pound ground turkey breast
  • 2 or more fresh garlic cloves or garlic powder
  • 1/2 large onion or 1 whole small onion
  • Oregano, pepper and other seasonings
  • 2 cups shredded Italian cheese mix
  • 1 can cheddar cheese soup
  • 1 can tomato soup or crushed tomatoes
  • 1 soup can water

Preheat over to 300 degrees. Boil pasta and cook until almost done. Brown ground beef and turkey together in the same pan with onion and garlic. Add oregano and other seasonings about halfway through cooking. Drain meat. Mix meat with soups and can of water and stir well. Add to pasta and mix gently so as not to tear pasta. Add 1/2 a cup of shredded cheese to mix and stir again until melted. Pour into large pan. Cover with remaining cheese. Bake for 25 minutes or until cheese is melted. Serve hot.

If you notice my colorful noodles, I used spinach and tomato died pasta. Another sneaky way to get those veggies in my families diet. If you eat them cooked and plain, they do taste like tomatoes and spinach.

This is another great recipe to play around with. I like to add the turkey breast to cut the fat. If you want, you can use 2 pounds of ground turkey. Also, feel free to add any fresh seasonings you’d like. I’ve been know to toss in fresh basil, rosemary, or even a bay leaf or two–whatever I’m in the mood for. A touch of ground mustard is also a great seasoning choice.

I prefer the crushed tomatoes, but the kids like the tomato soup. To each his own. Guess who usually wins out around here?

Enjoy this meal.
