Turkey Fajitas–Try A New Recipe Tuesday

turkeyfajitamixWith hot summer weather and long days, my family enjoys lighter meals. Also being able to take advantage of the wonderful produce at the local farmer’s market, just makes food so much tastier. This dish has both of those qualities, but it was so quick and simple.

I started out with a bag of Butterball Turkey Medallions. I purchased these at Sam’s a few months back. These are already cooked and are simply heat and eat. turkeyfajita2

I added the fresh garlic, onion, and bell pepper I found at the farmer’s market to the skillet while heating the turkey. Within ten minutes, I had an entire meal prepared for the whole family.

I like to eat mine with corn tortillas–more authentic and lower in fat. My boys like flour ( they are bigger and hold more stuffing). They also add cheese.

For a finishing touch, I added fresh tomato.  Turkeyfajita

If you want a nice side dish, add a Spanish rice mix of your choice. Fresh fruit, like watermelon and cantaloupe are great finishers for this summer meal.
